PULSE FICTION Project

Project summary

PULSE FICTION aims to develop minimally processed pulse products that satisfy consumer and farmer expectations, and have a low environmental impact.

One of the project's original features will be the development of intermediate food products based on specifications that take into account the constraints and needs expressed by consumers and farmers, and the creation by a chef of innovative and easy-to-make recipes at home based on these IFPs. The resulting products will be analyzed for their organoleptic properties, digestibility, satiety, their acceptance by consumers, and their environmental impact will be assessed. PULSE FICTION will not only allow the selection of products that meet consumers' expectations, farmers' constraints and sustainability issues, but also to understand the properties that a product should have to be cognitively and sensorially accepted. Finally, messages in support of consumer appropriation of legume-centered innovative solutions will be developed, and their efficiency and comprehension by consumers will be tested.
