The thesis project I work on aim to assess the impact of ethanol concentration in model water/ethanol solutions on the release of a selection of aroma compounds using chromatographic analysis techniques and in vivo monitoring. The effect of alcohol content on perception of aroma will also be studied through sensory evaluation and consumer assessment in real environments. The main objective of this PhD project is to better understand the role of ethanol in alcoholic beverages in order to improve the flavour of new alcohol-free or low alcohol beverages and hence consumer acceptance.
