Research theme
I am currently pursuing a Ph.D. at the Center for Taste and Feeding Behaviour in Dijon, under the supervision of Sophie Nicklaus and Lucile Marty. My research focuses on students' eating behaviours and promoting sustainable eating in university cafeterias. This research, conducted in partnership with the Crous Bourgogne-Franche-Comté, aims to develop effective strategies to encourage sustainable eating habits among students. To achieve this, we have analysed the nutritional quality and environmental impact of students' diets and food choices in a university cafeteria. We have also assessed the effectiveness of an intervention aimed at promoting the selection of vegetarian main meals in a university cafeteria in Dijon, particularly examining the acceptability of such a change by consumers.
