Activities

Research theme
The main research theme focuses on glycosylated natural secondary metabolites, such as saponins. After extraction (microwave, ultrasound), then purification by various chromatographic protocols, their structure is analyzed mainly by spectroscopic methods (2D NMR, MS). Once their structure is determined, their activity is evaluated on the sweet-tasting TAS1R2/TAS1R3 receptors to establish structure/activity relationships.
